Oven door seal test: Close the oven door and slide a piece of paper between the door and the frame. Pull the paper out — you should feel slight resistance. Do this at the top, bottom, and both sides. If the paper slides out freely at any point, the door gasket is worn and heat is escaping. A leaking seal makes your oven run hotter near the gap and cooler on the opposite side, creating uneven roasting. Oven door gaskets are inexpensive — $25 to $60 — and take 15 minutes to replace.
Self-clean cycle: Do NOT run the self-clean cycle within two weeks of Thanksgiving. The extreme heat (900°F+) stresses the oven igniter, thermostat, and door lock mechanism.
